Chunky Chocolate Cookies
3 1/2 cups plain flour
1 tsp. baking powder
1 1/4 cups butter, softened
1 1/2 cups firmly packed brown sugar
1 cup caster sugar
2 eggs, at room temperature
1 1/2 tsps. vanilla extract
200g dark chocolate, broken into pieces
Preheat oven to 355˚F. Line 2 baking trays with baking paper.
Sift flour and baking powder into a bowl and stir to combine. In another bowl beat the butter, brown sugar and caster sugar until light and fluffy. Add the flour mixture, eggs and vanilla and beat until just combined. Stir through half the chocolate.
With a large spoon, drop dollops of mixture onto baking trays and gently flatten allowing room to spread. Push remaining pieces of chocolate into the top of each circle of dough. Bake for
15 – 20 minutes or until golden and soft in the center. Allow to cool slightly.
