No Bake Chewy Bar

Are you a sucker or anything sweet, yet healthy and sensibly substantial? Then here is a chewy bar that is dense and indulgent, but good for you too with only 130 calories and 11 grams of protein per bar.

yields: 28 bars











 What you’ll need

2 cups of oatmeal

2 cups of chocolate whey protein powder

1/4 cups plain peanuts

1/2 tbls cinnamon


1 cup of natural peanut butter

1/4 cup of almond milk

1/4 cup of 60% Bittersweet Chocolate Baking Chips

1 tsp of vanilla extract

1/4 cup of unpasteurized honey


What to do

1. Lightly coat a 9- by 13-inch baking pan and a sheet of waxed paper with cooking spray and set them aside. In a large bowl combined oatmeal, whey protein powder, peanuts and cinnamon. Set aside.

2. In a large sauce pan combined and melt peanut butter, almond milk, chocolate chips, vanilla, and honey over medium heat stirring frequently. Add melted ingredients into dry ingredients and mix well.

3. Transfer the mixture to the prepared pan, then use the waxed paper, oiled side down, to flatten it.

4.Let the mixture cool for 1 hour in the refrigerator. Cut into 28 bars and refrigerate them in a sealable container layered between sheets of waxed paper until you are ready to enjoy!
