Pecan, Oat & Chocolate Chip Cookies

4 tbsp butter, at room temperature
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp salt
2 tbsp maple syrup
1 egg
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 cup rolled oats
1 cup pecans
1/2 cup desiccated coconut
1 cup semisweet chocolate chips

Preheat oven to 350˚F. Line a baking tray with baking paper.Place butter in a bowl and beat until light and fluffy. Add sugars, salt and maple syrup and beat to combine. Add the egg and stir to combine. Sift the flour and baking soda into the bowl and stir to combine. Add the oats, pecans, coconut and chocolate chips and stir until all ingredients come together.

Roll a tablespoonful of dough in your hands to form a ball and place on the baking sheet. Continue until all dough is used, allowing space between each to spread. Gently press each ball to flatten slightly and press a pecan into the center of each.
Bake in oven for 10 – 15 minutes until slightly golden.
